Soften your few onions and mushrooms, fry a few leftover potatoes too, take them out and leave them aside, add the eggs, after about a minute or two add the fillings and grated cheese at one side. While itās still a bit soft slide in a spatula and fold it over, cook for another couple of minutes and use a plate to flip it over and cook the other side. Or just dump the fillings in and put it under the grill to finish it off if folding it over is too finicky for you.

Omelettes are easy enough in one pan. Fry off all your contents well before lowering the heat and adding the eggs. It should be very low heat. Let it sit a bit. Take it off the heat as soon as you see bubbling and put it under the grill. Again lowish heat. Iād recommend some cheese on it. This cooks it through both sides slowly and should leave you with a delicious moist crispy omelette

Fry your mushrooms and ham for a minute or two first. Beat the egg, then add some mozzarella to the bowl. Add to the pan and cook over a low heat for 3 minutes ensuring you seperate the mixture from the pan all around the sides with an egg slicer. Then put in under the grill for another 2 minutes. Add black pepper, mixed herbs, etc to the mix if you feel like it mate.
Ingredients into the pan first, cook to soften then add the egg (I like to season it with salt, pepper and chilli flakes). I donāt bother folding it over, bit of cheese on top and then under the grill for a minute if needs be.
Try folding it over runt, you get a way more moist omelette and nicer texture.
I usually put ham, mushrooms, peppers, spring onion and cheese in mine mate so I find it too thick when I fold it over.

And you dont have to fold shit overā¦ Either stick on the oven while you are frying, or your grill, and fire the frying pan in to oven, or under grill, and you get a nice puffed up thick omelette.
I try get in chorizo, onions, mushrooms, chillies, potatoes, cherry tomatoes, cheese and maybe whatever else is lying around -itāll fit!
Itās nicer folded over. Just sayin.
You can fold it over, stick a few little umbrellas in it and write your name on it with tomato ketchup if you like, but after you take it out of the pan. Now fall in line and do as told :guns: :guns:

The omelettes I cook are so perfectly shaped and look so appetising I canāt bring myself to fold it over.

Runt, I am making spinach and ricotto Tortellini for my other half tonight and want to make some kind of non tomato based sauce for it.Maybe mushroom or carbonnara or something along those lines.
