@Tierneevin1979 would it make sense to try and reverse sear a handy enough sized piece of round roast beef. It is about 1kg in weight
Yeah, and it’s a small roast so shouldn’t take too long. Important to bring it to room temperature which can take 1-2 hours. Set the oven to 110C and leave the roast in there until it reaches an internal temp of 50C. The easiest way to sear it is take it out of the oven and get the oven up to as hot as it gets and put the roast back in for 10 minutes, although again with a small roast you could do this step in a frying pan.
It is frying pan sized so was thinking of just finishing it in a red hot pan with a bit of butter.
I assume you mean room temperature before cooking?
Yes, before cooking. Finishing in the pan is grand as well.
