What kinda timings ?

Used a leave in meat thermometer until it was at 55 degrees

About 30 minutes at 200.

Then onto a hot pan

Must only have been seconds on the pan ?

60 seconds or so each side until it was crispy

The leave in meat thermometer is a game changer

Possibly. I’d never reverse sear at that high heat in the oven. An hour or so at 100 and then blitz in pan or bbq. Must try it out.

It was lovely but the châteaubriand I had from there a few months ago was nicer if I’m being honest

Have you ever gotten seafood from there? They still don’t have it up on their site, can you only get it in the shop?
