I hear former GAA legend Woolly Parkinson is looking to emulate fellow GAA legends Joe Canning and Lar Corbett by moving into the restaurant business.

Its Colms missus Itsi, and the restaurant will be a Spanish Tapas one on Main Street, Portlaoise. I mentioned it here previously, and I hope we all can wish him and Itsi all the very best with their new venture.

It’s great to see some investment in rural Oireland. We’re back!

There were rumours that Parky was looking to rent a premises towards this end, but it turns out he was just looking to rent a load of quotes.

Its a bold venture, trying to sell Spanish Tapas to roasters in the midlands. I think it’ll do great, I’m unsure about the premises, but the premise is wonderful and ballsy guys like Colm are to be commended.
