I’d recommend a hybrid rather than a racer for that kind of casual stuff
For my Mizen to Malin trip I bought a Voodoo Marasa out of Halfords, a decent hybrid for under €600, it’s done the job just fine so far, although the online reviews say that it picks up punctures fairly handy and and I did indeed experience a few punctures cycling the length of the country. You can ask Halfords to add paneer holders for you if you want. Proper cyclists will have contempt for Halfords BTW.

I bought my MTB from Halfords earlier this year. It was a Voodoo as well.
Couldn’t get stock in other local stores and the Voodoo got best in class on a few websites for its price bracket (approx 800 euro).
Generally the people working in Halfords know very little about bikes. At the end of the day, they are lowly paid/ min wage workers as opposed to those who own small local cycling shops and eat, drink and sleep cycling.
I met a friend in Ardara Co. Donegal and stopped there. I’ll go back in a few weeks and finish off North Donegal to Malin Head.
They’re just teenagers who like cycling but sure they sell the bikes grand

The lads who I dealt with weren’t teens but were sound enough.

Should try it with ghee instead but might need a decent car for that

Not the nicest stretch for a cyclist though. Couple of hairy bits, particularly the bridge over the tolka there.
