Most of these roasters will be getting up at 5am to be in Dublin in time for the breakfast anyway. I donāt know what traffic they are worried about.

The Hogan Stand opposite gills is open if the shutter is half way up. Just pop in under it. Itās an absolute kip but beggars canāt be choosers.
Few places on Quays will actually be open if you were that desperate for a pint.
