I’m not a regular frequenter of take away food vans, but have to say Once Upon A Thai in Trim and Athboy is very, very good. Plays it safe with a small menu of offerings, we had the rolls and dipping sauce followed by Chicken and Cashew Nut main. Was as good if not better than any sit-down in a restaurant version. Steamed rice perfectly cooked, had to wait just 7 minutes after placing the order…

Spotted this recipe on Sunday brunch this morning, essentially a cottage pie with a few variations. It was superb.
What did the top one taste like?
Same as the others unusually
- Sliced instead of mashed
- Cheese
- Grill?
