What are these sauces like re sugar and salt wise? I prefer to make them from scratch in the pestle and mortar where possible…
And Since I started making my own tomato sauce I really notice that artificial taste and amount of sugar in anything from a jar like pasta sauce or a pizza from the shop…I don’t buy them anymore.

I have that. It’s very hot. Lovely on cheese.

I’d never use a shop bought tomato sauce, I make about 5 liters at a time and batch freeze it,
Tip, for tomato sauce use anchovies instead of salt and simmer for much longer than is suggested, I usually have it on for 5 hours, nice glug of balsamic at the end, loads of garlic and plenty of basil

Do you ever make conserve? Flavour is ridiculous.

I use a mix of tinned and good fresh tomatoes, about 50/50, dunnes do very good San Marzano tinned Tonatoes,
Roasting the fresh tomatoes first makes it even better, richer, I used to put other veg in and blitz it up but the kids have gotten better to eat veg now so no need

Salmon is delicious if it is cooked right, kept moist. Easiest way to cook it is in the oven tightly sealed in tinfoil cc @carryharry, a few slices of fresh tomato and chopped basil on top and a half glass of white wine. Tarragon another great choice instead of basil.
