Believe it or not he pan fried it.
Got it at a fishmonger stand in a local farmers market.
Didn’t really do much to it. Just seasoned then on the pan with some butter. Skin side down then flip. Done in about 5 or 6 mins. It was superb

I’d ate hake, lemon sole, sea bass and turbot to bate the band.
