Anyone who knows me knows I don’t like blowing my own trumpet but my Jaysus that was absolutely savage. 7 hours on the barbecue. I was up at 9 setting the barbecue. Worth every minute of it.

Put salt and pepper on it and left it overnight in the fridge. Then smoked it for 7 hours at 120c on the barbecue. Never so much as lifted the lid.
It takes serious discipline not to be checking it every 20 minutes.
You fuck up the temperature in the bbq every time you lift the lid.

Had it with a baked potato and some homemade “slaw”. Loads left over for sandwiches.
