That’s gorgeous stuff, a good white pudding is so soft it could be eaten without teeth, did you ever try the Sheehans Limerick one? McCarthys of Kanturk do a white pudding as good as the finest steak

I’ve been known to dabble in it.
its a superfood, it doesn’t have to be made by the 7th son of a 7th son in an out house In west Limerick using organically sourced ingredients who was trained to make pudding by a lad who cooked for the president of Ireland

I would often make a black pudding ragu as well. Sensational. One of the most versatile ingredients you could have in the kitchen

Few variations.
Either make a mince bolognaise as normal and fire in crumbled black pudding at end to thicken it up
Else
Substitute the mince for a much larger quantity of black pudding.
Dont throw it in til much later than you would put in mince though

Not at all, it’s fully cooked, in my smoking days I’d pop it into the microwave for a few seconds to warm it up before mangling between two slices of Pat the bakers white with ketchup
