Crush a handful of juniper berries and stick them on the breasts. Saute them for about 3 or 4 minutes a side, they should be firm to the touch. Throw a shot of gin on them and flambé. Remove them from the pan and finish the sauce with a small bit of chicken stock, a few tsp gin, and a bit of cream.

Why is it whenever I post a recipe on this thread the standard answer (from most) is “what the fuck is…” or “I don’t have any of that”. I thought Ireland had made wonderful strides in the culinary arena this century?
To flambé you need a match, or tilt the pan if you have a gas stove.
If you want something simpler, saute them in butter, throw in a few slices of an apple and a bit of cider, reduce and add cream.
Do you have an apple?
