We’ve had veggie meals for the past week and it’s really helping with the winter blues. Had a Sri Lankan veg curry tonight - all freshly ground spices, with peppers, chillis, spinach, ginger, tumeric, brocolli, onion, aubergines, and so on. I’ll walk away from some shite tomorrow!

It looks quite watery (and green) but it was actually pretty tasty. I’m not deterred though - this is only the start of my journey and I doubt the first few meals Donal Skehan cooked were gourmet standard.

@Bandage, looks like you might have used breast meat for the casserole?
Next time you’d be far better off using something like thighs, they are much more suited to the longer cooking time.
Some places you can get them skinned and boned if you don’t fancy them on the bone,
