Michelin two-star chef to move to Chapter One

Mickael Viljanen, who resigned this week as head chef at the Greenhouse restaurant in Dublin, is to take over the kitchen at Chapter One, on the other side of the River Liffey.
Mr Viljanen and Ross Lewis, Chapter One’s chef-owner, have entered a business partnership that will see the restaurant reopen as Chapter One by Mickael Viljanen, with the two chefs as co-owners.
Key members of Mr Viljanen’s kitchen team at the Greenhouse, which earned its second Michelin star in the 2020 edition of the influential guide, are expected to follow him to Chapter One, which will reopen as soon as pandemic restrictions allow.
Mr Lewis will remain a shareholder in and director of the restaurant, and will have an active role in the day-to-day running of the new business, but will no longer be cooking. He has owned the restaurant for 29 years.
“You get to a certain stage in your career when you do start thinking about what the next five or 10 years will hold. I got to the stage where I was looking to the future and saying mine is not the energy to take it on to the next part of the journey. Then Covid came along, and I had time to reflect on it,” Mr Lewis said.
Mr Viljanen said he does not intend to alter his modern-European style of cooking in the move.
That’s a right bummer.
This might be the most pretentious post in TFK history but that’s not a natural fusion of styles. Greenhouse is intense and fast, it’s a proper experience, the flavours in Chapter 1 are much more subtle and mature, it’s real dining. The deserts in the two places being an obvious point of contrast. It seemed to me they were almost deliberately playing the opposite of each other. I’d be interested in going some night to see how this works out.

Greenhouse was absolutely lovely place to go for lunch.
Chapter 1 I found pretentious, over priced and mediocre. Similar to gilbauds, (which was just overpriced and mediocre in recent times), but that’s the way it’s gone I spose
Best lunch I ever had was The Greenhouse. Better than anything else I’ve seen and also free for me so very cheap. Chapter 1 I went in the evening with a girl so it was very different but it was class and I didn’t feel ripped off.
I’d take a carvery in the 51 over any of those pretentious sparrow food establishments.
I got a good feed at Chapter 1, I was surprised.
