I remember accompanying an out of town friend there around 15yrs ago who had nabbed an interview there. He paused outside to look at the menu, seen spiced pigeon and aborted the mission.

There was no spiced pigeon on the menu.

An Aged Comté soufflé.

What is a Comte souffle?

Comte is cheese. Souffle is a shit tonne of eggs and flour made into a batter, poured into a ramikin and timed prefectly to rise.

Savoury in this instance with chheese but often a dessert (chocolate) too.
