Nice madrira cake out of the oven, will do a batch of scones later. The missus is having some fellow layabouts over for coffee in the morning while Lithuanian women clean their houses.
Stage 1 of the sourdough done tonight. The starter which will grow and breed the wild yeast necessary for this and all future sourdough bread. This will take three/four days to complete.

This starter never really got going and I abandoned it after about 8 days. I started another one and that was better. I made the bread this morning. It didn’t rise as much as I’d hoped but it tasted absolutely beautiful. The crust was unreal.
What sort of mix did you use for the latest starter?
I think I must have made a mistake at the very outset of the last mix. It was always a bit too liquid. The other change I made was to use a cheap bottle of natural mineral water from Lidl instead of the tap water I used on the first mix. The chlorine might have inhibited the growth of the yeast.
Just did a white soda bread there because I had a bottle of buttermilk that was about to go off. 30 seconds prep 30 minutes in the oven. It is fucking beautiful.

Made a porridge bread there. 1 large tub of natural yogurt an egg and a pinch of salt. Refill yogurt tub twice with porridge oats and add to the mix. Add two teaspoons of bread soda. Bake for 45 mins at 180 in a 2lb loaf tin. Lovely.
