Made these recently. A lot of sugar but a fabulous treat. The kitchen smelled amazing after them. I used olive oil in place of the canola oil.

Yield: About 2 dozen cookies
INGREDIENTS
Nonstick cooking oil spray
1 very ripe medium banana
⅓ cup canola oil
⅔ cup sugar
1 teaspoon vanilla extract
¾ cup plus 2 tablespoons all-purpose flour, or as needed
½ teaspoon baking soda
¼ teaspoon salt
¼ teaspoon ground cinnamon
2 cups quick-cooking (not instant) oatmeal or rolled oats
½ cup chopped walnuts
½ cup chocolate chips (vegan, if desired)

I regularly do this myself but never heard of adding the egg. I do 35 minutes in the tin and then take it out of the tin, turn it upside down and back in the oven for another 10 minutes.

There is alot going on there… the well worn plate showing a deep seated thriftiness and yet the walnut worktop shows that even the best of us get lost along the way sometimes.
I’d say you’d pay good money for a plate with that character
That’s a very old worktop. Paid a few bob for it but it’s as good as the day it was put in.
