Skirts and kidneys another Limerick delicacy from my childhood, mentioned them to the missus shortly after we met up and looked at me as if I was an alien🤣

Think there was a thread on it here before where we discussed it, but there wasn’t a scrap of the animal my grandfather wouldn’t ate. Pigs feets, pigs nose, pigs tail, ox tail, beef cheek, beef tongue, sheep heart, kidneys, stomach. And of course spare ribs which were about the only thing he could get me to eat. Although i didnt mind trotters too much once i didn’t see the prep

Half that stuff is a delicacy for big money now a days. He would basically take it off the butchers hands to save him throwing it out.

Beef cheek was going in dog food for years and still is to preserve the market for the stuff they sell for silly money.

I think i read an article about Pork Belly, which was being fucked away until the pig farmers in america paid a marketing crowd to make it cool.

Packet and tripe was big in limerick because of all the slaughtering factories so the off cuts would go home with the workers or be bought chape

Pork belly would have been used to make streaky bacon.

We’d have eaten all cuts of meat growing up, loads of offal, Skirts, pork neck, shin beef
I was sick of it back then but I love it now

The way to weed out the strange uns. Fruit or brown scones can fuck off.
