Knew I forgot something.

Marinated 6 chicken breasts on the bone and six drumsticks in franks hot sauce this morning. I gave them a quick browning in the pan and fired them into a casserole dish with some peppers, carrots and red onion. I then threw some of the leftover mushrooms, onions & pepper into the food processer with three quarters of a head of broccoli, some chicken stock, salt and pepper and a couple of spoons of wholegrain moo-stard which resembled the texture of a green pesto and I added to the casserole dish along with a glass of red wine and popped it in the over for around 2 and a bit hours at 140.

I then added some thinly sliced sweet potato with around 30 minutes to go. God knows how it will all hold together but it looks and smells decent. Will tuck into it tomorrow evening

Just did pork belly in the slow cooker with soy, wine vinegar, garlic and a bit of demerara for 4 hours and then under the grill for 5 mins to crisp the skin. Just letting it cool now before devouring

Sounds lovely, Iā€™d have gibena bit more than 5 minutes to do the skin right though. Is it crackling or just the inner skin?

Outer skin, It was just enough to put a bit of a crisp on it

Threw in a breast of turkey rubbed in fajita mix along with a chopped onion, some chicken stock, bit of tomato paste and some extra spices this morning. Pulled turkey this evening.

Pulled turkey? Is that the new name for choking your chicken?

This was fuckin unreal. Had it with sweet potato wedges, baked broccoli, avocado and salsa. Iā€™ll have a rake of it in some corn tortillas with tomato avocado salsa cheese and jalapeƱos tomorrow and stick the rest in the freezer.

The nutribullet was nearly consigned there as well but Iā€™ve taken to it again in recent weeks.

Iā€™ve a thai red beef curry on since this morning. Mrs J is upstairs putting the little lady down to bed so weā€™re waiting before we eat. Iā€™m salivating thinking about it.

What kind of beef did you put into that mate, Iā€™m gonna test out the slow cooker at the weekend but Iā€™m looking for ideas.

How was the curry? I find if you leave dishes like curry or stews on for 8-10 hours it seems to cook the flavour out them a bit. I have got better results flavour wise cooking on high for 4 hours.

Aldi are doing a slow cooker this week for 19.99. Might give it a try.
