As i stated earlier, i came to cork. Blanked my lodgings and went straight for Sakura. Looked at the menu and remembered the joy a seafood and tofu kimchi stew brings. Fucking delicious. Loads of prawns and squid and a few mussels.

@Spidey - I’ve 8 for dinner Christmas Day - 6 adults and 2 kids

We’re doing beef instead of Turkey.

What cut and size of beef would you recommend - bone in rib eye ?

We’re going solo for the first time here. Kids wont ate much so ive gone quarter ham, small spiced beef but uncertain whether i should bother with a turkey.

Probably will but it’s not ‘christmas’ enough apparently. if this emergency isn’t resolved we might have to go to Mrs O’Sullivan’s for one more year…

Get a small boned and rolled turkey

Beef Wellington is a dish that is rated under the “top 10 hardest dishes to make”, at number 4 .

It needs a bit of finesse - ive done it before. But used tinfoil instead of parchment to wrap so was bit soggy on bottom but otherwise good

Get a boned,rolled and stuffed turkey. Half it and freeze what you don’t use for the big day.
