Oil, two large onions finely chopped, 4 cloves garlic, two table spoons of curry power (I use hot) one table spoon garam masala, 2 tea spoons ground cinnamon, 2 teaspoons cumin, 200ml chicken stock, 1 tin chopped tomatoes… 2/3 chicken breasts cut up. Veg optional…

He asked about making a curry from scratch, you dick. Any clown can make a curry from curry powder. Cinnamon in a curry is disgusting, your thinking a North African dish like cous cous.

Dopiaza is a nice simple dish to start him off with that he can get all ingredients from tesco - proceed from there to other dishes.

A madras is a good start mate, and you can vary the heat by the amount of chilies you out in.
2tbs coriander seeds, 1 tbs cumin seeds, 2 tbs turmeric, 10 whole cardamon pods, 2 tsp whole black pepper, 1 tsp fenugreek seeds, 5 - 10 dried red chilies (remove the seeds if you don’t like it too hot). Toast the whole lot in a frying pan for a minute and then grind in a coffee grinder. If you want to get fancy you can add cassia bark and curry leaves but not easy to find.

I wonder do Indian mammies give their curries a name, I usually just wing it after the garlic ginger onion, coriander seed, mustard seed and garam masala, the world is your oyster and it’s hard enough to fuck up.
@ChocolateMice I don’t think that’s dopiaza unless you fuck in a load of onions at the end.

Dont forget the pataks lime pickle, I’ve started cooking curries even more that usual just so I can ate more of the stuff.

@iron_mike don’t be listening to these spoofers… They’ll have you growing a chilli plant, learning Sanskrit and offering sacrifices to Sheba all for a curry.

Don’t mind me, if you call something a Dopiaza then there is only one essential thing, that is two types of onions, some slow cooked and some almost raw. You’ve cooked a fine curry but not a Dopiaza.

Don’t mind that chancer, he thinks he’s a culinary expert because he sold a few olives.

The pretend chefs are seething - i’ve destroyed them here. Going off on weekend trips to London to source ingredients for a curry :joy:

There’s nowhere in Limerick where you can buy basic ingredients like cumin, coriander and cardamom?

There’s 2 shops less than 5 minutes walk from my house that would supply this and so much more.

What do you do then? I’ve a big bag of hot chili powder I bought in an Indian shop on Mary Street. Would that work instead of the dried chilies?

Yes.
Make a curry. Sauté onions and whatever protein you are using is you are using one, add the homemade curry powder, veggies, stock, tomatoes if you like them in a curry and simmer for 45 minutes.
