Four turkey burgers, a load of sweet potato wedges, half a can of refried beans, and a salad of tomatoes avocado and chilli, and a lash of rebel chilli company habanero relish.

You weren’t always like this

That time of year. Spuds, white cabbage, kale, parsley and huge scallions. All from the garden today. A chunk of salt pork seared and then boiled with the rest of above. Served with mustard and a half pound slab of Kerrygold.

Continuing on with the new potatoes theme, as we have them coming out our ears. An eccentric salmon recipe from Martin Shanahan. Steam sliced carrots in freshly squeezed orange juice with two (2) star anise. Seal the salmon in tinfoil. Carrots under and over the salmon. Liquid poured over. Tinfoil tightly secured. 30 min in a 190 oven.

Are the carrots meant to infuse the Salmon with some sort of carroty flavour, or vice versa? 2 star anise is a lot isn’t it?

The orange juice adds most of the flavor, it’s a very subtle flavor with the carrots. 2 star anise isn’t much, they were steamed with the carrots and in the tinfoil with the salmon for 30 min…
