A very basic frittata, all ingredients from the back yard. Parboil a few sliced new potatoes with a bit of kale and top of scallions, drain, sauté chopped bulbs of scallions with a crushed clove of garlic, beat 5 eggs and mix potatoe mixture in. Add to skillet and cook for 3 minutes, finish under grill/broiler for 3 minutes.
