I’ve often bought shin beef which has loads of marrow for cooking in an Osso buco or any stew, never got the bones for roasting though, I wonder is there some restrictions?
Dont know. Iv eaten it roasted in restaurant here though

As an aside, Hitachino is a lovely brand of beer. Well worth a look if you can get it in Ireland.

As an aside @Turenne if you were a Japanese chef used to cooking for royalty and the likes rather than a Muldoon who went to Kyoto once for a weekend, wouldn’t you be better off going to Ireland rather than whatever third world spot you’ve landed in?

They have it in yamamori in Dublin. Lovely stuff, but I find beer or wine doesn’t go well with sushi.

I’m in Singapore mate, it has a higher gdp per capita than Ireland.
However I’m not a big fan of eating Japanese food outside of Japan, unfortunately my wife chose, not me.
