After part boiling drain in a colander and give them a good shaking around in it then add your butter/oil, salt, pepper etc. It roughs up the the edges and gives a much crispier roasty .

What would you do on that rare occasion when you wouldn’t have a duck lying around the house waiting to season your spuds.

I’d instruct my woman to construct me a different dish.

Slow roast pork is just magnificent

Just had a fucking marvellous feed there.

Had left over roast chicken from yesterday cobbled it together with some saute mushrooms and camembert and into a roll and wrapped in foil and banged it into the oven for 10 mins. Magnificient

I’m fuckin starving and don’t want to go cooking shit at this stage :frowning:

I fucking knew Fagan ODowd would disagree with this.

To be honest, the shoulder I bought already had a spice rub/marinade into it. With regard to cooking, I use a gas BBQ and I turned one side down low (with the shoulder on it) and the other up high to keep the whole thing hot with the lid down. Cooked it for about 1 hour, turning it every 20 mins or so.

I looked into it a bit further after and the next time I’ll be making my own spice rub. I’m also thinking of using woodchip to smoke it better as per this suggestion here.

??? The last time I slow roasted a shoulder of pork, I did it for 5.5 hours mate.
