Anyone got any decent aubergine recipes/ideas? I’m stone mad for the things this weather and the only meal I know for them is pasta nonna or just doing a bake with courgette, mozzarella, parmesan, topped with a tomato, garlic, onion and chili sauce (with lots of basil). Tis a handy way to have a carb-free dinner of sorts but I’m getting a little bored of it.
They’re the steak of the vegetable world, man. Salt them for an hour, rinse them and then lash them on the pan and they’re almost good enough to eat alone.
Google a recipe for Melanzana Parmigiana, thraw. It’s a lovely dish.
Made it a couple of months back. It was on the Guardian. That’s fairly much what I made today. Had a version of it in an Italian restaurant in Kilkenny and mine (and my lady’s) was miles better. Getting bored with the aubergine, basil, tomatos, cheese theme though.
I’m having visions of putting some batter on the things and frying them up and putting them in a wrap with some spicy chicken and some cool sauce with lettuce or something like that.
Thrawneen is onto something here, love aubergines, been meaning to cook that dish you were on about before. Nothing special but they’re brilliant char-grilled with other mixed veg on a skewer or some such.
