When in doubt, Lamburgers. That’s gonna be my new motto. Bought some lamb mince yesterday. Fried off some garlic and onions, added in some crushed cumin and coriander seeds and threw in some mint concentrate.
Fried em for about ten minutes. Fucking gorgeous.
I have a lovely aubergine, mozzarella and tomato bake in the oven for lunch… The better half is making a sweet potato Sheppards pie for tea.
The aubergine bake was a triumph! Delicious!

Nice. I made something similar recently. Followed Jamie Oliver and just seasoned the meat with salt and pepper and rolled the patties in various spices and pistachio nuts before frying, the idea that the spices don’t overpower the flovour of the lamb.

For 4 persons-
One onion and 3 cloves of garlic chopped up fried up till golden and add 2 tins of chopped tomatoes ( I substituted one for a Lloyd Grossman tomato and chilli sauce) and leave that simmer away for 20-30 mins.
Slice two aubergines length ways at about quarter of an inch thick, about 10 lengths should do it. Bit of olive oil, salt and pepper on both sides and grill both sides till golden and remove.
You’ll need two mozzarella balls and some parmesan cheese.
So scoop a third of your tomato sauce on the bottom of the dish and spread out, put your aubergine on top, more tomato sauce and then rip up one of the mozza balls and place it around the dish. More layers of aubergine, tomato and the other mozza ball and cover with a generous helping of parmesan. Bake for 25/30 mins.

It’s fairly tasty and not the worst, cheese aside… Mozzarella is actually not a bad cheese calories wise. It’s a simple dish and a grand light meal, I ate half a dish today and I’m hungry again now.
Ainsley Harriott lentil Dahl packet
Chicken breasts
Olive oil
Lime
Mint
Coriander
Natural yoghurt
Make the Dahl as per packet - boil and simmer for 15 minutes
Recipe on back of packet suggested following so I made it
Zest of lime, juice of half lime, some mint, coriander olive oil, make a paste and coat chicken and then fry it
Mint, coriander mix with natural yoghurt as a dressing on the side.
Turned out great. Will try and make it from scratch next time but had not eaten Dahl before.
As take outs go I believe it difficult to beat the wings from Pizza Republic in Cornelscourt. Pizza selection is top notch also, my current fav being Rosseroni (mozzarella fresca, spicy pepperoni, chicken, crispy bacon and red cheddar).
The slow cooker is being dusted off this evening. There is some diced lamb thawing out at home as I type…
Must get some fresh herbs at lunch time. I think a decent curry is the way to go.

Go back a couple of pages for my slow cooker curry recipe. It makes me smile just thinking about it.
I took a lunchbox out of the freezer this last night to defrost, presuming it was some of the Chicken Balti I had made last week. Got home this evening, boiled myself up some pilau rice. About five minutes before the rice was ready I opened the lunch box to find it was actually bolognese. I am now sitting here eating the two, I wouldn’t recommend it
