You called him a proper scientist. Scientists like any other profession typically have earned qualifications. Would you hire a plumber because they once had a pint with a real plumber?
Next time you are in a good restaurant, go into the kitchen and ask them how they cook their steaks, or ask a chef if you know one. You will get the same answer from all of them, grilling on a covered grill (or a barbeque as the yanks call it) is #1, but assuming the restaurant doesn’t have a covered grill, oven roasting is the preferred method. No properly trained chef pan fries a good steak.
