If you are frying an egg and want the yolk runny you fry the eggs as normal to begin with. Throw a bit of water in the pan and cover the pan with a lid for two minutes or so.
No flipping required.

How much water?
A spoon or so will do. Just enough to create steam basically once it hits the pan. You can rinse and repeat as needed. Usually just keep a cup of water and a teaspoon nearby when doing eggs.

An alternative that requires flipping but gives more consistent results imv is to crack the egg into the pan and break up the membrane around the yoke. The white cooks much more evenly and then a quick flip for about 10 seconds gives you a perfect runny yoke the whole way through. A good (read not fucked from suffering thermal shock by pouring cold water over it when hot) non stick pan is essential.
