Would ye stuff the Turkey lads?
The only thing thatās worse than turkey is the possibly salmonella infested mushy crap that people scoop out of it and call stuffing. To get the stuffing to a safe temperature (74C) you have to overcook the turkey, making it worse than it already is.
Cook the stuffing separately, or if you must cook it inside the bird, take the turkey out of the oven when it reaches an internal temp of 74C, scoop out the stuffing and put it into a 200C oven for 15 min while the bird is resting and you make the gravy. Youāll end up with nice crispy stuffing.

We are moments from the Christmas dinner (on Christmas eve). Weāve just had some outstanding Sydney Rock Oysters and not very good prawns with a nice champagne and Iām niw tasting the first of the crackling with a pale ale.
Moving onto sitting down with the roast pork and shuraz in a few minutes.
