So using charcoal wouldn’t fit under your definition of bbq’ing either?
What about doing a rack of ribs in a gas BBQ with soaked woodchips over 8 hours?
Not a puff as long as the sticks are dry.
They look class - is there much discolouration on the drum from use?
It takes a while but when they do discolour they still look well. I only bought recently but a neighbour has theirs a while and it looks good.

The Ooni has been a wonderful addition to my outdoor lifestyle. Highly recommended. I’m still struggling with stretching the dough but apart from that it’s been quite an enjoyable journey.
There’s a long enough lead time on orders so I’d urge anyone considering it to order ASAP.
You can go gas or wood fired and 12 inch or 16 inch. I went 12 inch gas for convenience and portability. I also lack of storage space (urban living problems). I have no regrets about my decisions. (The decision to buy the Ooni that is. I have lots of regrets about life decisions I’ve made).
Something like this is the business if you are going to be cooking joints of meat on it (or in the regular oven). Takes out all the guess work.
