Can of chickpeas drained an rinsed
Couple of red onions cut into wedges. Aubergine cut into wedges.

Roast the onion and Aubergine in the oven tossed in olive oil. When cooked serve on/with the chickpeas (no need to cook)

Serve with a dressing of natural yoghurt, finely chopped mint leaves and smoked paprika all mixed together. Garnish with Rocket.

I’d be thinking throw in some chargrilled chicken with that and fuck the lot in a wrap. It sounds a bit measly otherwise.

Yeah but I’m probably poorer now than when I was one. Anyway, a little bit of carbs is ok. I usually have a small piece of toasted wholemeal bread or ciabatta with my aubergine parmigiana.

Agreed-I assumed I would like them and had some a few weeks ago when I was roasting a load of veg. I didn’t enjoy it one bit.

I did similar, I assumed I’d like them and made an aubergine curry one day. What a let down.
