Fish was cheaper in the olden days largely because it was cheaper to fish than to farm and fish were plentiful. Fish was also not as fashionable as it is now. It was a penitential dish and we ate it grudgingly. My mother would go down the town on a Friday and buy a few bits of plaice from an owl wan with a stall on Arundel Square. The fish would be sitting there all day and refrigeration wasnāt a thing. You wouldnāt see it in the wet market in Wuhan these days.
Fish is now considered heathy and has become fashionable at the same time as it has become scarce leading to the classic supply and demand dynamic = expensive.
