You are correct, in that if he was Irish , I would not have written ‘Irish Coont’, I would have instead written somethig along the lines of ‘Galway coont’ or ‘Cork Coont’ depending on where I deciphered his accent to be from.
Also, there would be no Galway races without Owners and Trainers, that is a no brainer.
